3-Ingredient Frittata

Ingredients
  

  • 6 cage-free eggs
  • 2 Yukon gold potatoes, diced
  • 1/4 cherry tomatoes, halved
  • Salt and pepper to taste

Instructions
 

  • Whisk 6 cage-free eggs in a bowl. Add a pinch of salt to taste.
  • In a skillet over medium heat, lightly sauté diced Yukon Gold potatoes until they’re tender—season with desired seasonings.
  • Add halved cherry tomatoes to the skillet and sauté for a few minutes.
  • Pour the whisked eggs over the sautéed potatoes and tomatoes, ensuring they spread evenly. Let the eggs set for a minute or two.
  • Cover the skillet with a fitted lid and reduce heat to medium/low. Let frittata set for about 10 minutes.
