Instructions
Whisk 6 cage-free eggs in a bowl. Add a pinch of salt to taste.
In a skillet over medium heat, lightly sauté diced Yukon Gold potatoes until they’re tender—season with desired seasonings.
Add halved cherry tomatoes to the skillet and sauté for a few minutes.
Pour the whisked eggs over the sautéed potatoes and tomatoes, ensuring they spread evenly. Let the eggs set for a minute or two.
Cover the skillet with a fitted lid and reduce heat to medium/low. Let frittata set for about 10 minutes.
